Snacks to Make the Most of the Fall Harvest

It’s officially fall, bringing with the weather changes fresh, colorful fruits and vegetables to create some of our favorite snacks. Packed with vitamins and other nutrients, golden pumpkins, luscious berries and brightly colored apples can be made into some of the most tempting treats. Here are some fun and delicious seasonal-inspired snacks you can make for your whole family:

PUMPKINS

Pumpkins and gourds are popping up on tabletops, in doorways and on front porches – and pumpkin-spiced-everything is taking over menus and grocery stores. We love this trend in fall fruit (yes, pumpkins are a fruit!): low-calories; rich in vitamins, potassium and fiber; and of course we can’t forget the seeds, which are full of iron.

CRANBERRIES

Lucky for all of us, cranberries are easy to find at most local markets without having to wade through a wet cranberry bog where they grow. Best known as trimmings for holiday feasts, these antioxidant-rich berries are packed with Vitamin C and make a great snack at only 45 calories a cup. Need a little crans-piration?

APPLES

Whether you like Granny Smith, Fuji or Red Delicious, apples are an icon in the all-American diet. Providing nearly 20% of the recommended daily amount of fiber and at around only 95 calories, apples are not only a superb stand-alone snack but they’re ideal ingredients too. The prime apple-picking fall season is also a great time to venture outside the norm and try some of the more unique varieties – such as the slightly sweet Gravenstein. Take advantage of this autumn asset with these recipes.
