Recipe: Honeydew & Tomato Salad with Feta

A stylish symphony of colors, the flavor combination in this Honeydew and Tomato Salad with Feta recipe is delectable: sweet, tangy, salty, and rich. The tart tomatoes and sweet melon are the stars, but the supporting players – hot jalapeno, earthy pumpkin seeds, pungent cilantro – add plenty of intrigue.

With 90 percent of their weight coming from water, melons will keep you hydrated while also giving you a burst of energizing vitamins and minerals, while the single hot jalapeno in the dressing delivers a nice kick (and awakens your taste buds) without overwhelming the other flavors. This is the perfect first course or side to be served alongside grilled fish, meat, or other picnic favorites.

  1. In a small skillet over medium heat, add pepitas and cook for about 2 to 3 minutes, stirring constantly. Remove seeds from pan and set aside.
  2. In a large bowl, add cumin, olive oil, jalapeno, cilantro and lime juice, and whisk to combine.
  3. Add chopped tomatoes and melon to bowl and stir to coat. Then gently add feta and toss to combine. Taste and season with salt and pepper, then sprinkle with pepitas and serve!
