Go Green for St. Paddy’s Day

St. Patrick’s Day is just around the corner, and whether you like to dress up in green or hit up a city’s green river, there’s nothing like ringing in this holiday with some festive cheer!

This year, we’re all about celebrating with some green grub, so we rounded up healthy recipes to keep you reveling in the luck o’ the Irish all day long. Each recipe is loaded with vitamins and minerals, and naturally green – completely leprechaun approved!

Breakfast

Banana Mango Green Smoothie Bowl – Spinach and kale are responsible for this delicious beverage’s beautiful green hue, while also offering tons of antioxidants and vitamins (namely iron and vitamins A and C). Banana and mango sweeten things up (and add even more nutritional power). Couldn’t get luckier than that!

Takes Two to Mango Green Smoothie – When you just can’t decide between enjoying oats or a smoothie for breakfast, combine the two! Combine rolled oats, spinach, mango and orange to make this delicious – and heart healthy – breakfast. Just like kissing the Blarney Stone!

Shamrock Shake Smoothie – If you love treating yourself to a Shamrock Shake every year, then try this healthy alternative. The sweetness of vanilla yogurt, mint and banana combined with spinach and kiwi are the perfect combo … and perfect for some St. Paddy’s Day magic.

Pear & Arugula Smoothie – A squeeze of fresh orange brightens up this green smoothie, while Greek yogurt gives it a protein-rich body, and arugula lends its four-leaf clover color.

Soups & Sides

Chicken & Spinach Soup with Fresh Pesto – Don’t be fooled by this Italian-flavored soup. It will go well with just about any St. Patrick’s Day celebration meal. Plus, the spinach, basil and pesto add the necessary festive greens to your table!

Creamy Avocado, Arugula, Broccoli Soup – Perfect to serve hot or cold, this soup is fancy enough to satisfy the foodies at any St. Paddy’s Day get-together and simple enough to give you more time for celebrating!

Green Goddess Soup – Skip the green beverages and sip on this lovely soup instead. You can customize it based on what combinations of lettuce you’ve got in your fridge – Iceberg, watercress, rocket and spinach all work.

Zucchini Noodles with Pesto – A delicious way to incorporate veggies into your mealtime by opting for zucchini noodles instead of regular pasta. Use a julienne peeler or spiralizer to cut into thin strips, then toss with your favorite basil-based pesto and some cherry tomatoes. There will be Irish smiles all around the dinner table with this recipe!

Snacks
