Mrs. Buggles’s Tooty-Fruity Roll-Ups

A perfect mix of sweet and savory, these fruit-filled roll ups take less than five minutes to assemble. Banana and peanut butter are a personal favorite, but feel free to mix and match until you find your ideal combo. We have a feeling apple and almond butter would be pretty delicious as well.

Eat in the Car Bars

Whether you eat ‘em in the car or in the living room, these no-bake bars will help keep energy levels high. Make a bunch and store them in the freezer for a quick fix.
Eat in the Car Bars
What you’ll need:
2½ cups quick oats
1 cup sunflower seeds
½ cup raisins or dried cranberries
½ teaspoon cinnamon
½ cup nut, seed, or soy butter
½ cup agave sweetener or honey

Directions:

  1. Mix oats, seeds, dried fruit and cinnamon in a large bowl
  2. In a separate bowl, whisk together nut butter and agave well. Add to oat mixture and combine. Mixture should be firm but sticky, with a consistency similar to oatmeal-raising cookie dough. If mixture is too dry, add additional nut butter in 1-tablesppon amounts until consistency is as described above.
  3. Line an 8” x 8” baking dish with aluminum foil or wax paper and spread mixture evenly into dish. Cover with another layer of foil or wax paper and press hard into the dish, flattening the mixture. Refrigerate for about 4 hours, then cut into squares.
