Need some fresh lunch ideas? Whether your brown bag is for yourself or your kids, this veggie packed tortilla roll-up from Catherine McCord of Weelicious will fit the bill. The protein-packed hummus is sure to stave off any mid-afternoon hunger pangs. For those who haven’t made homemade hummus before, this simple recipe can be whipped up in minutes and is a great way to save on a grocery staple.

Veggie Packed Tortilla Roll-Up

Ingredients:

Super Easy Hummus

Tortilla Roll-Ups

Directions: 

For hummus

Place the chickpeas, garlic, tahini, lemon juice and salt in a food processor and pulse to combine.

Add the olive oil and continue to pulse until smooth and creamy.

*Pro Tip—Tahini is a sesame seed paste that can be found at your local grocery, usually near the peanut butter or in the kosher aisle.

For roll-ups

Spread 2 tablespoons of hummus on each tortilla, taking care to cover the edges, since the hummus will act as a glue to hold the wrap together.

Sprinkle ¼ cup of the grated carrots along the closest edge of each tortilla, and lay ¼ of the avocado slices on top of the carrots.

Roll up, slice in half diagonally and serve.
