The protein-packed hummus is sure to stave off any mid-afternoon hunger pangs. For those who haven’t made homemade hummus before, this simple recipe can be whipped up in minutes and is a great way to save on a grocery staple.
Veggie Packed Tortilla Roll-Up
Ingredients:
Super Easy Hummus
- 1 (15-oz) can chickpeas, (garbanzo beans), drained and rinsed
- 1 clove garlic
- 2 Tbsp tahini
- 3 Tbsp lemon juice
- 1 tsp salt
- ⅓ cup olive oil
Tortilla Roll-Ups
- ½ cup hummus, (see above)
- 4 whole wheat tortillas
- 2 medium carrots, peeled and grated (about 1 cup)
- 1 avocado, sliced
Directions:
For hummus
Place the chickpeas, garlic, tahini, lemon juice and salt in a food processor and pulse to combine.
Add the olive oil and continue to pulse until smooth and creamy.
*Pro Tip—Tahini is a sesame seed paste that can be found at your local grocery, usually near the peanut butter or in the kosher aisle.
For roll-ups
Spread 2 tablespoons of hummus on each tortilla, taking care to cover the edges, since the hummus will act as a glue to hold the wrap together.
Sprinkle ¼ cup of the grated carrots along the closest edge of each tortilla, and lay ¼ of the avocado slices on top of the carrots.
Roll up, slice in half diagonally and serve.
