Ingredients:
- 1 package Birds Eye Steamfresh® Chef’s Favorites Sweet Potatoes With Brown Sugar, cooked according to package directions
- 1 Tbsp olive oil
- 1/4 cup finely chopped sweet onion
- 2 green or red apples, cored and thinly sliced
- 1 tsp finely chopped fresh thyme leaves or 1/4 tsp dried thyme
- 6 cups baby spinach and/or arugula
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted pumpkin seeds
Directions:
- Heat oil in a nonstick skillet over medium-high heat and cook onion, stirring occasionally, 2 minutes or until starting to soften. Add apples and cook 4 minutes or until starting to brown.
- Stir in cooked sweet potatoes and thyme. Season, if desired with salt and ground black pepper; cool slightly.
- Arrange spinach greens on platter. Top with sweet potato mixture, feta cheese and pumpkin seeds.
