Recipe: Harvest Vegetable Salad

Directions:

  1. Heat oil in a nonstick skillet over medium-high heat and cook onion, stirring occasionally, 2 minutes or until starting to soften. Add apples and cook 4 minutes or until starting to brown.
  2. Stir in cooked sweet potatoes and thyme. Season, if desired with salt and ground black pepper; cool slightly.
  3. Arrange spinach greens on platter. Top with sweet potato mixture, feta cheese and pumpkin seeds.
