We’ve all been there; you see an amazing recipe online or in a cookbook only to see that the ingredients are less than healthy – especially when it comes to desserts. Disappointed, you walk away thinking you’ll never be able to make that guilty treat.
At PHA, we’re always looking for ways to make our favorite foods healthier without sacrificing flavor, which is why we absolutely love this gluten, dairy, and sugar free Fudgey Flourless Chocolate Brownies recipe. It’s much easier than people think to create something that might not include dairy or gluten in the list of ingredients, but is just as delicious as its traditional counterpart.
And these brownies can stand up to any of the flour and sugar-filled brownie recipes around. Black beans, an often-overlooked nutritional powerhouse, have benefits that extend to your general wellness and waistline, and also give these brownies a terrific fudgy texture. There is no reason why dessert should be anything less than perfect, and these are proof that you can have a decadent treat with the benefit of more protein, more fiber, and fewer fat calories.
Ingredients:
- 1 ¼ cups sugar-free chocolate chips or (carob chips or grain sweetened chocolate chips)
- 1 (15.5 ounce) can black beans, rinsed and drained
- ¼ cup carob powder or cocoa powder, unsweetened
- 2 eggs
- cup olive oil or coconut oil, melted
- ¼ tsp cinnamon
- 2 tsp vanilla extract
- ¼ tsp salt
- ½ tsp baking powder
- 1 tsp instant coffee
- 1 tbsp powdered stevia
Directions:
- Preheat oven to 350 degrees.
- Line an 8 by 8 baking dish with parchment paper.
- Spray parchment paper
with nonstick cooking spray.
- Process all ingredients in a food processor
until smooth.
- Pour onto parchment paper
in baking dish and smooth out batter to edges of dish.
- Bake 30-35 minutes until a toothpick comes out perfectly clean.
- Cool on wire wrack for 10 minutes then remove by holding edges of parchment paper
and lifting out.
- Transfer onto a wire rack to cool before slicing on a cutting board.
