Recipe: 3 Step Eat-in-the-Car Bars

Road trip season is upon us, and we have the perfect snack to keep the whole family fueled up while on the go. You can whip up these simple no-cook granola bars at home before kicking off your trip or churn out a batch while on the road (they’re that easy to make). All you’ll need is access to a refrigerator or cooler and a quick visit to the grocery store.

Pro tip: Make sure to store these in a Tupperware container to keep the bars from drying out.

Eat-in-the-Car Bars

Ingredients:

2 ½ cups quick oats

1 cup sunflower seeds

½ cup raisins or dried cranberries

½ teaspoon cinnamon

½ cup nut, seed or soy butter

½ cup agave sweetener or honey

Directions:

  1. Mix oats, seeds, dried fruit and cinnamon in a large bowl
  2. In a separate bowl, whisk together nut butter and agave well. Add to oat mixture and combine. Mixture should be firm but sticky, with a consistency similar to oatmeal-raisin cookie dough. If mixture is too dry, add additional nut butter in 1-tablespoon increments until consistency is as described above.
  3. Line an 8” x 8” baking dish with aluminum foil or wax paper and spread mixture evenly into dish. Cover with another layer of foil or wax paper and press hard into the dish, flattening the mixture. Refrigerate for about 4 hours, then cut into squares.
