Creative Recipes for Mother’s Day

Mothers, grandmothers, aunts, friends, caretakers and other role models – where would any of us be without the power and love of the females nearest and dearest to us? No matter what you call her, she’s someone special and this is the week to make sure she feels that way.

In addition to greeting cards and cheerful bouquets, a meal made for mom is a traditional part of this American holiday. And while no one can beat mom’s home cooking, we can at least try to give her a break on her special day and serve up something on par with her standards.

Make mom happy all day long with a homemade goodie or meal that’s perfect for breakfast in bed, brunch, or a festive dinner she’s sure to love:

Breakfast: Start mom’s day right by serving breakfast in bed. She won’t be able to get enough of these Whole Wheat Cranberry-Orange Muffins for a tart, yet refreshing breakfast bite. Serve along with an Asparagus Frittata – a springtime favorite.

Lunch: There’s no way that mom won’t be on board with this delicious Spinach Salad with Dried Cranberries, Walnuts and Pomegranate Vinaigrette. It pairs perfectly with hearty Chicken Caesar Pita.

Dinner: Impress mom with your cooking skills by preparing Mediterranean-influenced Chicken with Olives and Lemons. If she loves fish, you may want to try this Oven-Steamed Halibut. It only takes 35 minutes!

Snack: Treat mom to an afternoon “pick-me-up” by preparing delightful Greek Yogurt with Espresso Honey (we happen to love it with Dannon Oikos Greek Yogurt!). Or you can satisfy her sweet tooth with Fresh Strawberry Shortcakes with Yogurt Cream.
