Chef Victor Albisu combines his culinary education with his Latin American heritage in his restaurant concepts: Del Campo, an upscale South American grill that was named a Best New Restaurant by Esquire magazine, and Taco Bamba, a takeout taqueria that reflects his Cuban and Peruvian roots. Outside the kitchen, he supports The First Lady’s Let’s Move! initiative, and this year, he competed on Food Network’s Beat Bobby Flay and bested the host and grill master with his signature dish, Steak & Eggs.

  1. If you were stranded on a deserted island, and only vegetable grew on that island, what vegetable would you want it to be? Garlic.
  1. What is your healthiest habit: Drinking lots of water, especially immediately after waking up in the morning.
  1. What is your go-to nutritious breakfast: Hard Boiled Egg Whites.
  1. What are the 3 items that are always in your fridge/pantry: Garlic, Spanish olive oil, Sprouted Bread.
  1. What is your favorite workout? Tennis.
  1. Who is your fitness hero? Bruce Lee.
  1. How do you take your water – sparkling, flat, over ice? Sparkling.
  1. What is your guilty pleasure? Dulce de Leche.
  1. What is your healthy eating philosophy: Everything in moderation.
  1. What is your go-to nutritious family dinner dish? Whole roasted chicken or fish with grilled seasonal vegetables chimichurri.
  1. What is the best health advice you’ve ever received? Run a mile a day, no matter what.
