Think cranberries are only for the holidays? Think again! This nutrient-rich wonder-fruit can be enjoyed in a variety of ways beyond the traditional (albeit delicious!) cranberry sauce.
Need a little crans-piration? Try this Palomino Chicken recipe from Ocean Spray. It’s a little fruity, a little sweet, a little tart and A LOT delicious! The apricots and cinnamon give the sauce a sweet and savory flavor, a nice complement to the tartness of the berries. And even better? This dish can be prepped and cooked in only 25 minutes, which makes it a perfect quick weeknight meal, but delicious enough for guests!
Ingredients:
- 1 14-ounce can Ocean Spray® Whole Berry Cranberry Sauce
- 1 plum tomato, seeded and chopped
- ¼ cup diced dried apricots
- 1 ¼ tsp cinnamon
- ½ tsp ground ginger
- 1 tsp dried cilantro
- 1 tsp hot pepper sauce
- ½ tsp black pepper
- 6 boneless, skinless chicken breast halves
Directions:
Combine all ingredients, except chicken, in a medium saucepan. Cook until heated through. Keep warm until serving time. Sauté, broil, bake or grill chicken. Top each breast with ¼ cup of the cranberry mixture.
Makes 6 servings.
