Recipe: Hot Vegetarian Ranchwich

Whether you’re vegetarian or simply looking for a creative lunch to include in your #MeatlessMonday rotation, you will absolutely love this Hot Vegetarian Ranchwich recipe from Hidden Valley.

Alternative proteins are all the rage these days – and tofu is no exception. And if you think tofu is bland and boring, think again. This vegetarian staple is amazingly versatile, adaptable and full of protein. It absorbs the flavors of the ingredients it’s paired with and works in a variety of cooking methods. Which is why we fell in love with the light and fresh flavors of cucumber, tomato and Ranch dressing on a warm and delightful sandwich!

Ingredients:

Directions:

  1. Press tofu slices between paper towels to absorb excess moisture. Pour 2 tablespoons dressing over tofu. Marinate for 20 minutes.
  2. Place tofu on cookie sheet and bake in preheated oven at 350ºF for 15 minutes. Turn over and bake 5 minutes or until bubbly.
  3. Meanwhile, spread toasted bread with the remaining 2 tablespoons of dressing. Place baked tofu on one piece of toast.
  4. Add slices of cucumber, tomato, onion and lettuce leaves. Top with second piece of toast. Cut in half diagonally.
