Recipe: 15-Minute Quinoa Bowl

This 15-minute meal from Hyatt is perfect, whether you’re cooking for one or for the whole family. The simple flavors blend together to create a refreshing dish that will leave you feeling satisfied. Directions:

To cook quinoa:

In a saucepan, bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork and hold chilled and covered.

For the bowl:

Put the kale in a small bowl and add a drizzle of olive oil. Hand-massage the kale to tenderize. Fold in the quinoa. Add the lemon juice, olive oil and toss to fully coat. Add celery and cherry tomatoes and toss. Place into serving bowl. Garnish with freshly scooped avocado.
