Makes: 8 rolls
Ingredients:
8 round rice paper wrappers (9 inch)
8 pieces Boston lettuce, washed and dried
8 large strawberries, hulled and very thinly sliced
1 mango, peeled, pitted and sliced into matchsticks
3 tbsp sliced fresh mint leaves
Dipping Sauce:
3 tbsp fresh lime juice
2 tbsp honey
2 tsp finely chopped fresh mint leaves
Directions:
Fill 9-inch pie plate with warm water. Dip one rice paper wrapper into water for 5 to 10 seconds or until pliable; pat dry with tea towel and carefully place on work surface.
Lay one piece of lettuce on rice paper wrapper; layer one-eighth of the strawberries, mango slices and mint leaves down the center. Fold one bottom edge over filling; fold sides into center and roll up to enclose filling. Repeat with remaining ingredients.
Dipping Sauce: In bowl, whisk together lime juice, honey and mint leaves. Cut rolls in half diagonally; serve with dipping sauce.
