Bring back a little bit of summer with a light, refreshing, and protein-rich Jasmine Asian Salad recipe from Uncle Ben’s. This Asian-inspired salad is easy and takes no time to make (prepped and cooked in under 30 minutes!), but the end result is something different than the usual rice salad. Jasmine rice has its own special flavor and aroma, and the addition of bright and colorful ingredients such as edamame, red bell pepper, and sliced almonds give each bite a tasty crunch.
Ingredients:
- 1 8.5-ounce package Uncle Ben’s® Ready Rice® Jasmine
- 1 5-ounce can Bumble Bee® Chunk Light Tuna in Water, drained
- ½ cup shelled edamame (if frozen, thawed)
- ½ red bell pepper, sliced
- ¼ cup chopped green onion
- ¼ cup sesame ginger salad dressing
- 4 cups (about 4 ounces) mixed baby lettuce
- 2 tbsp toasted sliced almonds
Directions:
- Cook the rice according to package instructions. Pour the rice into a medium bowl and let cool.
- When the rice is warm to the touch, but not hot, add the tuna, edamame, red pepper, green onion and dressing. Stir together until the dressing is well incorporated.
- Serve the rice over the lettuce and garnish with toasted almonds. If desired, serve extra sesame ginger dressing on the side.
