Recipe: Jack-o-Lantern Stuffed Peppers

Halloween is approaching, and we couldn’t find a more fun way to get your kids ready to head out for a night of trick-or-treating than with these Jack-o-Lantern Stuffed Peppers. The pumpkin faces on this All Hallows Eve dish will have your kids devouring their dinner, while the turkey and brown rice will keep them full and satisfied for a night of hauntingly good times.

Pro Tip 1: Cut down on cooking time by using some of these great brown rice options from Uncle Ben’s.

Pro Tip 2: It is easier to carve the peppers after cooking, but make sure they aren’t too soft. Roast the peppers without any foil or covering as that will soften them.

Ingredients:

Directions:

  1. Cut out the core of the pepper and remove seeds.
  2. Sauté onion and garlic until softened. In meanwhile, mix ground turkey with olive oil, Worcestershire Sauce, parsley, salt and pepper, raisins.
  3. Add turkey to frying pan and cook until done, turning frequently.
  4. Add in brown rice. Mix.
  5. Stuff peppers. Turn upside down into baking dish.
  6. Bake for 30-40 minutes at 350.
  7. Using exacto knife or sharp paring knife, carve faces.
