Chef Todd Gray is co-founder of Equinox Restaurant in Washington, DC. He is a five-time nominee for the James Beard Foundation’s Best Chef, Mid-Atlantic Award. In 2011, he was named the Restaurant Association of Metropolitan Washington’s Chef of the Year. As a part of First Lady Michelle Obama’s “Chefs Move to Schools” program, Gray and his wife, Ellen Kassoff, were recognized by the White House for their dedication to promoting healthy lifestyles for elementary students and their families.

1. If you were stranded on a deserted island, and only one vegetable grew on that island, what vegetable would you want it to be? Spinach.

2. What is your healthiest habit? Biking to work.

3. What is your go-to nutritious breakfast? Smoothie with peanut butter, agave, frozen bananas almond milk and shot of espresso.

4. What are the 3 items that are always in your fridge/pantry? Almond milk, ketchup, peanut/almond butter.

5. What is your favorite workout? Vertical stairs, 40 pushups, free weights and hot yoga.

6. Who is your fitness hero? Lebron James is my favorite athlete.

7. How do you take your water – sparkling, flat, over ice? Sparkling (non-sodium kind).

8. What is your guilty pleasure? Grey Goose with soda and splash of cranberry, with a lime.

9. What is your healthy eating philosophy? Eat less, move more
.

10. What is your go-to nutritious family dinner dish? Udon noodle soup with tofu, cilantro and shitakes.
