11 Questions With … Chef Kelsey Nixon

Chef Kelsey Nixon hosts the Cooking Channel series “Kelsey’s Essentials,” and was a finalist in the fourth season of the Food Network series “The Next Food Network Star,” where she was also voted ‘fan favorite.’ You can also catch Kelsey dishing about her favorite sweets from around the country on “Unique Sweets” and hosting the interactive series “The Perfect Three” on the Cooking Channel.

  1. If you were stranded on a deserted island, and only one vegetable grew on that island, what vegetable would you want it to be? Corn on the cob.
  2. What is your healthiest habit? Getting enough sleep. I really make an effort to get 7 or 8 hours of sleep each night and I feel like it makes a huge impact on my productivity and focus throughout the day.
  3. What is your go-to nutritious breakfast? I’m big fan of the avocado toast craze. I love a toasted piece of whole wheat bread with mashed avocado, scrambled eggs and a few dashes of hot sauce.
  4. What are the 3 items that are always in your fridge/pantry? Canned Tomatoes, Canned Artichokes and Pasta.
  5. What is your favorite workout? Chasing after my toddler! (ha!) I also really enjoy barre classes.
  6. Who is your fitness hero? I love engaging on Instagram and have loved following Diana Smith (@livylovestorun). She has been a great inspiration to follow as she’s lost over 100 pounds and improved her fitness by making smart food choices and exercising. She’s also maintained her new routine while being pregnant with her third child and it’s been so neat to watch her take on a fit pregnancy. Diana is a great example of how sticking to the basics of healthy eating and exercise can result in huge transformations.
  7. How do you take your water – sparkling, flat, over ice? Sparkling with a lemon wedge.
  8. What is your guilty pleasure? A hot bubble bath. I take one nearly every night!
  9. What is your healthy eating philosophy? Eat only until I feel satisfied and don’t overly restrict myself.
  10. What is your go-to nutritious family dinner dish? Lately fish tacos have been a big hit in my family. We particularly love them paired with black bean and corn salsa I make with canned foods straight from my pantry.
  11. What is the best health advice you’ve ever received? To listen to my body. When something doesn’t feel right or I feel that I’ve been overindulging just a bit too much, then I’ll pull back and readjust.
