11 Questions with … The Produce Mom

Lori Taylor is a wife, mother and the author of The Produce Mom®, a blog that is dedicated to consumer education and increasing the consumption of fruits and vegetables.  The Produce Mom is the founder of educational program Find Your Favorite® and retail program Produce Mom Picks®. Lori has nine years of experience in distribution sales & marketing for the fresh produce industry.

 

  1. If you were stranded on a deserted island, and could only bring one vegetable with you, what would it be? I am going to give this to cauliflower. I love the taste of raw cauliflower and it is very nutrient-dense… a deserted island win-win!
  2. What is your healthiest habit: I drink a lot of water. I recently gave up all soda, so my water intake is even greater than what it has been in previous years. I feel so much better when I am well-hydrated. I also am less likely to crave a salty snack when I #DrinkUp!
  3. What is your go-to nutritious breakfast: I’m almost always eating breakfast on the go, but I never skip this important meal. You simply cannot go wrong with a classic banana. At least three mornings a week, I’m eating a banana for breakfast. If I have more time, I like to sit down and enjoy a hot breakfast. I take my eggs over-medium and serve them over fresh greens – arugula is a wonderful breakfast green.
  4. What are the 3 items that are always in your fridge/pantry: Fresh lemons, Greek yogurt salad dressing and bold roast coffee.
  5. What is your favorite workout: Almost two years ago I started running. When I started, on my very first run of this journey, I could not finish one mile. As a matter of fact, I stopped at .79 miles. I could not go any further – I vomited and cried. I was in horrible physical condition and it was affecting my ability to love others – simply because I didn’t love myself. Running changed my life because it brought me inner peace. And now, as part of my routine, it brings me balance. I have completed three half marathons and I am registered for the Zion National Park Half Marathon and the Indiana University Half Marathon this spring.
  6. Who is your fitness hero: I know a lot of physically fit individuals – all have made a lasting impact on my life. But when I’m working out, I think about my grandpa a lot. My grandpa died when I was in 5th grade. He died as an amputee. I cannot even guess the number of times I have looked down at my legs during a workout and thought, “I can do this. God gave me these legs and I am blessed to have this ability.” More often than not, my late grandfather is the reason why I run five miles on the days I plan to run less. He is my hero.
  7. How do you take your water – sparkling, flat, over ice? Nothing beats a sparkling water! Love the bubbles!
  8. What is your guilty pleasure: It’s a tie between group texting & Britney Spears. Love catching up with my friends and family via a big group text message… and I love catching up with my pop culture and Britney Spears news.
  9. What is your healthy eating philosophy: Eat real food – stuff that is grown and prepared with minimal ingredients.
  10. What is your go-to nutritious family dinner dish: Walleye is our favorite nutritious main course.  Roasted root vegetables or raw carrots, paired with a baked Yukon Gold or sweet potato are our favorite veggie sides. We love to finish our meals off with some pineapple, too – totally satisfies the sweet tooth!
  11. What is the best health advice you’ve ever received: Be the example. We must encourage those who are struggling with wellness – through our words and actions. Stay positive, set goals and share your goals with your loved ones. My mom taught me all of this by being my example. Moms are the best!
